
Ingredient:
8 oz Somen Noodles (uncooked) 3 cups Chicken Broth 2 tbsp Soy Sauce 2 tbsp Creamy Peanut Butter 2 tsp Sesame Oil 1 tsp Hot Sauce 2 tsp Peanut Oil 1 tbsp Ginger (minced) 3 Garlic Cloves (minced) 1 Green Bell Pepper (seeded and diced) 1 lb Shrimp (medium, peeled and deveined) 1/4 cup Dry Roasted Peanuts (coarsely chopped) 1/4 cup Scallions (chopped) *optional Cilantro Leaves (chopped, for garnish)
Direction:
1. Cook noodles according to package directions. 2. Combine chicken broth, soy sayce, peanut butter, sesame oil and hot sauce in a medium saucepan, mix until it's well blended then set the pan on medium heat. Let it simmer for 10 minutes. 3. In a large skillet heat the peanut oil on medium heat, and then add ginger and garlic and saute for 2 minutes. Add bell pepper and saute for 2 minutes, then add shrimp and saute for 2 minutes. Add 1 cup of peanut sauce, let it simmer for 2 minutes until shrimp is cooked. Drain noodles then add to shrimp mixture then mix throughly. 4. Serve it on 4 individual plates.
